Bourbon-oatmeal Pie Recipe

Ingredients
  • 1/4 c Light or heavy cream; room temperature
  • Freshly-ground black pepper; to taste
  • Salt; to taste
  • 3 tb Snipped chives; for garnish
  • 1 lb Sweet potatoes
  • 1/4 c Good-quality bourbon
  • 2 tb Brown sugar;
  • 2 tb Butter; room temperature

Directions
  • Step #1 Prick sweet potatoes several times with a fork & roast at 350 degrees for 45 mins or until tender.
  • Step #2 As soon as you are able, using a potholder or kitchen towel, peel potatoes & add to work bowl of a food processor/blender.
  • Step #3 Process until smooth.
  • Step #4 Add butter, sugar, cream & bourbon.
  • Step #5 Process to incorporate everything.
  • Step #6 Spice up to taste.
  • Step #7 If you wish, shape sweet potatoes into quenelles before serving.
  • Step #8 Garnish with chives, sprinkling them all over plate.
