Braised Brisket With Salsa Verde Recipe

Ingredients
  • 2 tb Brunoise red peppers
  • 4 Garlic cloves; sliced
  • Cayenne pepper; to taste
  • 2 tb sliced chives
  • 1/2 c Fried shallot crusts
  • 24 oz Dixie beer -;
  • 4 c Julienne onions
  • 1 c Water
  • Emeril's Essence; see Note
  • Salt; to taste
  • === GARNISH ===
  • 2 tb Olive oil
  • 1/2 lb Roasted new potatoes
  • Freshly-ground black pepper; to taste
  • Horseradish Sauce; see Note
  • 5 lb Beef brisket;

Directions
  • Step #1 Note: See the "Emeril's Essence Information" & "Horseradish Sauce" recipes which are included in this collection.
  • Step #2 Preheat the oven to 400F degrees.
  • Step #3 With a sharp knife, make about 10 slits in the brisket.
  • Step #4 Stuff each hole with 2 to 3 slices of the garlic.
  • Step #5 Spice up the meat with salt, cayenne & Emeril's Essence.
  • Step #6 In a large saute pan, heat the oil.
  • Step #7 When oil is hot, sear the meat evenly, for 2 to 3 mins on all sides.
  • Step #8 Transfer the meat to a large Dutch oven with a lid.
  • Step #9 Bake, uncovered, for about 45 mins.
  • Step #10 Remove the pot from the oven.
  • Step #11 In a mixing bowl, toss the onions with salt, cayenne & Essence.
  • Step #12 Arrange the onions around the meat.
  • Step #13 Add the beer & water.
  • Step #14 Cover & return the pot to the oven.
  • Step #15 Reduce heat to 350 degrees & continue baking for 2 1/2 hrs, or until tender.
  • Step #16 Turn the meat over twice during baking.
  • Step #17 If the liquid evaporates too much, add another can of beer & 1/2 c water.
  • Step #18 Remove the meat from the pan & reserve the liquid.
  • Step #19 Slice the meat into individual portions.
  • Step #20 Mound the roasted potatoes in the center of the plate.
  • Step #21 Carve the brisket & lay over the potatoes.
  • Step #22 Spoon the Horseradish Sauce over the meat.
  • Step #23 Garnish with fried shallot crusts, chives & brunoise peppers.
  • Step #24 This recipe yields 12 servings.
  • Step #25 Comments: The fried shallot crusts are julienned shallots, marinated in a hot sauce, dredged in flour, & deep-fried until golden.
