Bran Muffins Recipe

Ingredients
  • 1 500 g carton low fat custard
  • 16 Sponge fingers;
  • 4 tb Brandy
  • 450 g Bramley apples; peeled, cored and sliced
  • 100 g Caster sugar;
  • 75 g Plain chocolate; grated
  • 1 250 g carton quark; low fat cheese
  • 200 ml Cloudy apple juice;
  • 2 tb Cocoa

Directions
  • Step #1 Place the apples & 75g (3oz) of the sugar in a pan, cover & slowly bring to the boil.
  • Step #2 Simmer for 4-5 mins or until soft.
  • Step #3 remove this from the heat & cool.
  • Step #4 Place the quark, custard & remaining sugar in a large bowl & beat together until smooth.
  • Step #5 Place the apple juice & brandy in a shallow bowl.
  • Step #6 Mix together the chocolate & cocoa.
  • Step #7 Dip half the sponge fingers in the apple juice, then place this in the base of one large or 4 individual glass dishes.
  • Step #8 Spoon over half the apple & a third of the chocolate mix.
  • Step #9 Spread over half the cheese mixture.
  • Step #10 Repeat the layers, then Sprinkle top it over the remaining chocolate.
  • Step #11 Chill for at least 1 hr in the fridge.
  • Step #12 Serve cold.
