Step #1 1 The day before: put the broad beans in a bowl, cover them with water & leave them to soak overnight.
Step #2 2 The following day: peel the onion.
Step #3 Cut the bacon in slices.
Step #4 Strain the beans.
Step #5 3 Heat 2 litres water in a saucepan, add the onion, salt & pepper.
Step #6 When the water begins to boil, pour in the broad beans, cover the pan & let simmer for 1 hr.
Step #7 Add the bacon & cook for another 30 mins.
Step #8 Spice up this with salt at the end of the cooking time.
Step #9 Strain & serve in a vegetable dish.
Step #10 Campanile tip: These beans, served hot, are delicious with a roast joint, but can also be eaten cold.
