Ingredients
  • 2 lb Broccoli
  • 1/3 c Unbleached white rice
  • 1 pn White pepper
  • 1/2 ts Dried thyme
  • 1/2 ts Umeboshi vinegar
  • 2 tb sliced fresh tarragon for garnish
  • 1 pn Cayenne pepper
  • 1 ts Dried tarragon
  • 2 qt Plus 2 Tbs. vegetable stock
  • 3 Cloves garlic; minced
  • 1 md Onion; sliced
  • 1 tb Olive oil
  • 1/2 ts Apple cider vinegar
  • 1 1/2 ts Sea salt
  • 1 1/2 lb Red bell peppers;
  • 1 md Lemon; Juice of

Directions
  • Step #1 8 SERVINGS VEGAN When I first made this soup, I intended to use the pureed roasted red pepper just as a garnish.
  • Step #2 But I liked the flavor reserved some for a visually appealing swirled garnish.
  • Step #3 Trim broccoli, peel & chop stems & reserve florets.
  • Step #4 In large pot, mix broccoli stems, rice, 1/2 tsp sea salt & 2 quarts vegetable stock.
  • Step #5 Bring to a boil, reduce heat, & let simmer 20 mins.
  • Step #6 Add florets & let simmer 20 mins more.
  • Step #7 Meanwhile, turning with tongs until charred all over, roast bell peppers over an open flame or broil, about 10 mins.
  • Step #8 Put peppers in brown paper bag for 10 mins to sweat them.
  • Step #9 Remove loosened charred skins.
  • Step #10 Chop peppers, place this in mixer or food processor/blender & process until pureed.
  • Step #11 Add 1/2 tsp salt & remaining 2 tbsps stock to liquefy.
  • Step #12 (This should yield about 1 1/2 c.
  • Step #13 ) In large skillet, heat oil over medium-high heat.
  • Step #14 Add onion & cook, stirring often, until softened, about 3 mins.
  • Step #15 Add garlic, tarragon, thyme & cayenne.
  • Step #16 remove this from heat & add to pot with broccoli mixture; simmer 10 mins.
  • Step #17 In mixer or food processor/blender, process soup, in batches if necessary, until pureed.
  • Step #18 Return soup to pot and stir in the 1 c of red pepper puree.
  • Step #19 Reserve remaining pepper puree for garnish.
  • Step #20 Spice up soup with 1/2 tsp salt, apple cider vinegar, white pepper, umeboshi vinegar & lemon juice.
  • Step #21 To serve, ladle broccoli soup into serving bowls.
  • Step #22 Drizzle about 1 tbsp of red pepper puree over each serving & swirl with chop stick.
  • Step #23 Garnish with fresh minced tarragon, if desired.
