Broccoli Florets With Hollandaise Sauce Recipe

Ingredients
  • 855 ml Vegetable stock
  • Salt & freshly ground black pepper
  • 175 g Toasted; flaked almonds
  • 2 White parts of leek; sliced
  • 1 lg Onion
  • 150 g Low fat soft cheese
  • 4 Ripe pears
  • 2 15 ml spoons fine oatmeal
  • 570 ml Milk
  • 40 g Butter
  • 1 250 g head broccoli

Directions
  • Step #1 1.
  • Step #2 Trim the broccoli into tiny florets, chop the stalky parts quite small.
  • Step #3 In a large saucepan, melt the butter & add the sliced leeks, onion & broccoli stalks (leave aside the florets for later).
  • Step #4 Stir well & leave to sweat for ten mins.
  • Step #5 Then add sliced pears.
  • Step #6 2.
  • Step #7 stir in the the oatmeal, almonds & milk a little at a time, stirring well after each addition.
  • Step #8 When the milk is stirred in, add the stock & Spice uping.
  • Step #9 Whisk well & let simmer carefully for ten mins.
  • Step #10 While the soup is cooling, steam the broccoli florets for about 5 mins.

  • Step #12 Pour the soup & place the soft cheese into a food processor/blender, and mix until smooth.
  • Step #13 Return the soup to a rinsed out pan, add the broccoli florets & re-heat carefully, adjusting the Spice uping.

  • Step #15 serve this with crusty French bread.
