Broccoli Potato Soup With Parmesan Croutons Recipe

Ingredients
  • 1/2 c Blanched almonds
  • 1 c Tightly packed fresh basil leaves 3/4 c extra-virgin olive oil
  • 1/2 c Tightly packed broccoli florets
  • 1/2 c Freshly grated Parmigiano-Reggiano cheese
  • 6 Garlic cloves; sliced
  • 1 tb Balsamic vinegar
  • 1/4 c Chicken stock
  • 1/4 ts Freshly ground black pepper

Directions
  • Step #1 mix all the ingredients in a food processor/blender & mix until you have a smooth paste.
  • Step #2 Yield: about 2 c.
