Broccoli With Shallots And Croutons Recipe

Ingredients
  • Dried hot red pepper flakes to taste
  • 1/4 c Extra-virgin olive oil
  • The zest of 1 lemon removed with a vegetable peeler and minced
  • 2 bn Broccoli;

Directions
  • Step #1 Trim the broccoli, peel the stems, & slice them thin.
  • Step #2 Cut the flowerets into 2-inch pieces & reserve them.
  • Step #3 In a large steamer set over boiling water steam the broccoli stems, or until they are crisp-tender, covered, for 5 mins, & transfer them to a bowl.
  • Step #4 In the steamer steam the reserved flowerets, or until they are crisp-tender, covered, for 3 to 5 mins, & transfer them to another bowl.
  • Step #5 Sprinkle top the stems & the flowerets with the zest, the red pepper flakes, drizzle the oil over them, & salt to taste, & toss the mixtures well.
  • Step #6 Arrange the stems in the center of a platter and arrange the flowerets around them.
  • Step #7 Serves 8.
