Broiled Eggplant Rolls With Goat Cheese And Tomato Recipe

Ingredients
  • Olive oil
  • Salt; to taste
  • Eggplant
  • Garlic cloves; crushed
  • Bread crumbs; as needed

Directions
  • Step #1 Slice the eggplant thin & Sprinkle top with a bit of salt.
  • Step #2 Do not peel.
  • Step #3 Drain the slices in a colander for 1/2 hr.
  • Step #4 Rinse with cold water & pat dry with paper towels.
  • Step #5 Pan-fry the slices slowly in a bit of olive oil until they are brown.
  • Step #6 Arrange them on a baking dish and Sprinkle top bread crumbs that have been mixed with olive oil & fresh crushed garlic on top.
  • Step #7 Place under a broiler until the crumbs are browned & all is hot.
  • Step #8 Serve as soon as possible.
