Broth With Toasted, Thin Noodles / Sopa De Fideos Recipe

Ingredients
  • Salt & freshly ground black pepper
  • 2 Limes
  • 2 Good handfuls of fresh coriander
  • 8 md Scallops; trimmed, with roe on or off
  • 1 l Chicken or fish stock
  • 455 g Live clams
  • 8 Raw tiger prawns; peeled, with dark
  • intestinal vein removed
  • 2 Heaped tbsp finely sliced ginger
  • 455 g Noodles
  • 170 g Black beans; soaked overnight
  • 1 Handful fresh parsley or basil
  • 2 md Or large fresh red chillies; deseeded & finely sliced

Directions
  • Step #1 1 Rinse the soaked black beans.
  • Step #2 Cover with water, boil & let simmer until tender.
  • Step #3 2 Bring the stock to the boil & let simmer with the ginger.
  • Step #4 Steam the seafood above the simmering stock (if you don't have a steamer, put the seafood in a foil envelope, add a swig of water or white wine and bake in the oven at the highest temperature for 5-10 mins or until opened up).
  • Step #5 3 While your seafood is steaming, cook the noodles in boiling salted water until tender & drain.
  • Step #6 Divide the noodles between four deep broth bowls & scatter with the seafood, beans, herbs & chilli.
  • Step #7 Check the Spice uping of the broth & serve from a teapot at the table.
  • Step #8 Finish with a squeeze of lime juice.
