Step #1 In a heatproof bowl set over a pan of simmering water melt the chocolate & the butter, stirring until the mixture is smooth, and let the mixture cool.
Step #2 Beat in the egg, the brown sugar,and the vanilla & stir in the the flour, the cinnamon,and the salt.
Step #3 Divide the mixture into 16 mounds, on buttered baking sheets & bake the brownies in the middle of a preheated 350F oven for 8 to 10 mins, abut 3 inches apart, or until they are just firm.
Step #4 (They will flatten into disks.
Step #5 ) transfer the brownies with a spatula to racks to cool & freeze them for 30 mins, or until they are very firm.
Step #6 Divide the ice cream, among the flat sides of 8 of the brownies, softened, & top the ice cream with the remaining brownies, spreading it smooth, flat sides down.
Step #7 Freeze the ice-cream sandwiches, covered, for at least 1 hr or overnight.
Step #8 Serve the ice-cream sandwiches drizzled with the caramel sauce.
