Bruschetta Al Pomodoro (tomato Toast) Recipe

Ingredients
  • 1 c Fresh basil
  • Red wine vinegar; to taste
  • Salt & pepper; to taste
  • 1/3 c Olive oil; plus
  • 2 tb Garlic; minced
  • 3 Cloves garlic; slivered
  • 2 tb Shallots; minced
  • 1 ts Fresh lemon juice
  • 1 3/4 lb Plum tomatoes;,
  • 8 Thick slices of round peasant bread
  • 1/4 c Olive oil

Directions
  • Step #1 I have a nice recipe for Bruschetta that I use quite a bit.
  • Step #2 The key is ripe tomatoes & lots of fresh basil, & of course a good extra virgin olive oil.

  • Step #4 Cut the tomatoes into 1/4-inch dice & place this in a bowl.
  • Step #5 Toss with the minced garlic & shallots.
  • Step #6 2.
  • Step #7 Chop the basil coarsely & add to the tomatoes, salt & pepper, along with the lemon juice, & 1/3 c olive oil.
  • Step #8 Set aside.
  • Step #9 3.
  • Step #10 Heat the 1/4 c olive oil in a small skillet.
  • Step #11 Saute the slivered garlic until golden, 2 to 3 mins.
  • Step #12 Discard the garlic & reserve the oil.
  • Step #13 4.
  • Step #14 Toast the bread & cut each slice in half.
  • Step #15 Arrange the slices on eight small plates.
  • Step #16 Brush the garlic-flavored oil over each slice, spoon the tomato mixture over the bread, & serve as soon as possible.
  • Step #17 The mixture should be at about room temp.
