Step #1 An olive spread, sometimes called black olive paste or cream, available at Italian markets & specialty foods stores.
Step #2 If unavailable, use pureed pitted brine-cured black olives.
Step #3 Char red bell peppers over gas flame or in broiler until blackened on all sides.
Step #4 Seal roasted bell peppers in paper bag & let this stand 10 mins.
Step #5 Peel & seed bell peppers.
Step #6 Cut bell peppers into 1/2-inch-wide strips.
Step #7 Prepare barbecue (medium heat) or preheat broiler.
Step #8 Grill bread until golden brown, watching closely so that bread does not burn, about 2 mins per side.
Step #9 Spread 1 side of each bread slice with 1 generous tsp olivada.
Step #10 top this with bell peppers, then cheese.
Step #11 Spice up this with pepper.
Step #12 Sprinkle top with sliced fresh parsley.
