Bruschetta With Scented Salmon Spread Recipe

Ingredients
  • 4 sl Crusty italian bread; cut 1/2-inch think
  • Salt & freshly ground black pepper; to taste
  • 1/4 c Extra-virgin olive oil
  • 2 Roasted & peeled garlic cloves
  • 2 md Red bell peppers
  • 1 tb sliced fresh flat-leaf italian parsley or regular parsley
  • 2 Minced anchovy fillets; sliced

Directions
  • Step #1 1.
  • Step #2 Cut the bell peppers into 1/2-inch strips & place this in a deep bowl.
  • Step #3 2.
  • Step #4 In a small bowl mix the garlic & the anchovies with the olive oil, & mix to mix.
  • Step #5 3.
  • Step #6 Pour oil mixture over the peppers.
  • Step #7 4.
  • Step #8 Add the parsley, Spice up this with salt & several grindings of pepper, & toss everything well.

  • Step #10 Taste & adjust the Spice uping, & set aside until ready to use.
  • Step #11 (The dish can be prepared up to this point several hrs ahead.

  • Step #13 Keep it tightly covered in the refrigerator.
  • Step #14 Bring the peppers back to about room temp before serving.

  • Step #16 Brush the bread slices lightly with olive oil & place on a hot griddle or under a broiler until golden on both sides.
