Bulgur Burgers Recipe

Ingredients
  • 3 tb Finely sliced tarragon leaves
  • 1/2 c Brown or green lentils; preferably lentilles du Puy
  • 3 tb Tarragon wine-vinegar
  • 1 ts Salt
  • 1/3 c Finely sliced shallot
  • 1 1/2 c Water
  • 3 tb Olive oil; preferably extra-virgin
  • 1 c Bulgur; preferably fine
  • 1/2 c Finely shredded carrot
  • 1/2 c Walnuts; toasted lightly and sliced fine
  • 1/2 c Finely sliced celery

Directions
  • Step #1 In a small bowl mix shallot & 1 tbsp vinegar.
  • Step #2 In a small saucepan simmer lentils in water to cover by 2 inches until just tender but not falling apart, 15 to 20 mins, & drain well.
  • Step #3 Add hot lentils to shallot mixture & Spice up this with salt & pepper.
  • Step #4 Cool mixture, stirring every once in awhile.
  • Step #5 In a small heavy saucepan mix 1 1/2 c water, bulgur, & salt & let simmer, covered, until water is absorbed, 12 to 15 mins.
  • Step #6 Transfer bulgur to a large bowl & cool completely, stirring every once in awhile.
  • Step #7 Add lentils to bulgur with celery, tarragon, oil, walnuts, carrot, remaining 2 tbsps vinegar,and salt & pepper to taste and toss well.
  • Step #8 Salad may be make 1 day ahead & chilled, covered.
  • Step #9 Bring salad to about room temp before serving.
  • Step #10 Serves 4 as an entree or 6 as a side dish.
