Bulgur Pesto Timbales Recipe

Ingredients
  • 2 Shallots; minced
  • 2 sm Zucchini; sliced in 1/8" cubes
  • 5 tb Butter; OR oil
  • 1/2 ts Dried basil; crumbled
  • 2 c Bulgur; cooked, cooled
  • 6 Mushrooms; finely sliced
  • 2 Eggs; well beaten
  • 1/3 c Flour; all-purpose
  • Salt & pepper

Directions
  • Step #1 Heat 2 T.
  • Step #2 of the butter or oil in a skillet & in it cook the zucchini, shallots, & mushrooms until all the juices have evaporated.
  • Step #3 Add the basil.
  • Step #4 Stir this mixture into the bulgur.
  • Step #5 Add the eggs & Spice up to your taste with salt & pepper.
  • Step #6 Shape into 6 cutlets.
  • Step #7 Dredge in flour.
  • Step #8 Heat remaining 3 T.
  • Step #9 of butter or oil and fry the cutlets until golden on both sides.
  • Step #10 serve this with plenty of green vegetables or a green salad.
