Ingredients
  • 2 ts Ground coriander
  • 1 ts Ground cumin
  • 1/2 ts Indian chili powder
  • 1/2 ts Ground fenugreek
  • 1/3 c Coarsely-sliced fresh ginger
  • 4 Garlic cloves
  • 2 c Plain yogurt
  • 1/2 ts Cinnamon
  • 6 lb Leg of lamb; butterflied
  • 2 ts Garam masala
  • 1/2 ts Ground cardamom
  • 1/2 ts Ground allspice

Directions
  • Step #1 In workbowl of a food processor/blender mix yogurt, garlic, ginger and spices.
  • Step #2 Process until it forms a smooth paste.
  • Step #3 In a shallow glass baking dish pour yogurt marinade over lamb & turn several times to coat.
  • Step #4 Cover & put in the fridge at least 6 hrs & up to 48 hrs.
  • Step #5 Light a charcoal grill or preheat a stovetop grill until very hot.
  • Step #6 Add lamb & grill, 25 to 30 mins, or until an instant-reading thermometer registers 130 to 135 degrees for rare meat, 140 to 145 degrees for medium.
  • Step #7 Remove to a carving board, cover loosely with foil & let meat rest for 10 to 15 mins.
  • Step #8 Slice thinly to serve.
