Chicken Breasts With Plum Salsa And Basmati Rice Recipe

Ingredients
  • 3/4 lb plums, pitted & sliced
  • 2 tsps vegetable oil
  • salt & pepper to taste
  • 3 habanero peppers, seeded & minced
  • 3 tbsps minced fresh cilantro
  • 1 tsp sugar
  • 1 1/2 c water
  • 2 tsps fresh rosemary, minced
  • 3/4 lb boneless, skinless chicken breasts
  • 1 c uncooked basmati rice, rinsed & drained
  • 1/2 medium red onion, minced

Directions
  • Step #1 Place water in a medium saucepan, & stir in the the rice.
  • Step #2 Bring to a boil.
  • Step #3 Cover, reduce heat, & let simmer 20 mins.
  • Step #4 Remove from heat, cool slightly, & fluff with a fork.
  • Step #5 In a medium bowl, habanero peppers, cilantro, onion, mix until well mixd the plums, & sugar.
  • Step #6 Cover, & put in the fridge about 30 mins.
  • Step #7 Meanwhile, season chicken with fresh rosemary, salt, & pepper.
  • Step #8 Heat vegetable oil in a large skillet over medium-high heat.
  • Step #9 Place chicken breasts in hot oil, & brown about 1 min per side.
  • Step #10 Reduce heat to medium, & cook chicken about 5 more mins per side.
  • Step #11 Serve over rice with plum salsa.
