A; butternut squash, peeled, seeded, and cut into 3/4-inch pieces
Directions
Step #1 Preheat the oven to 400F.
Step #2 In a steamer set over boiling water steam the squash, for 15 mins, covered, or until it is tender.
Step #3 In a food processor puree the squash with the butter, Spice up it with salt and pepper, & transfer it to a buttered 2-to 3-c shallow baking dish, smoothing the top.
Step #4 Sprinkle top the squash with the walnuts & the Parmesan & bake it in the upper third of the oven for 15 mins, or until the cheese is melted & the walnuts are toasted.
