Butternut Squash Soup Recipe

Ingredients
  • 1/2 ts Salt
  • 1 1/2 ts sliced garlic
  • 1/2 ts Freshly-ground black pepper
  • 1 tb Finely-minced jalapeno pepper
  • 1 Recipe Shrimp Salsa; see Note
  • 2 c Chicken stock
  • 1/4 c Heavy cream
  • 2 lb Butternut squash -;
  • 1/2 ts Ground cumin
  • 2 tb Peanut oil
  • 1/2 c Thinly-sliced carrot
  • 1 c sliced onion

Directions
  • Step #1 Note: see the "Shrimp Salsa" recipe which is included in this collection.
  • Step #2 Cut the squash in half & scoop out the seeds.
  • Step #3 Peel the squash and cut into 1-inch pieces.
  • Step #4 In a large pot, heat oil over med-heat/flame.
  • Step #5 Add onion & garlic & cook, until they begin to brown, stirring often, about 5 mins.
  • Step #6 Add the carrot, cumin, salt, & pepper.
  • Step #7 Cook for 1 min, & then add squash, jalapeno pepper, & chicken stock.
  • Step #8 Bring to a boil, reduce heat & let simmer for 15 to 20 mins, or until the vegetables are tender.
  • Step #9 remove this from the heat & puree the soup using an immersion mixer, or transfer to a mixer or food processor.
  • Step #10 Puree until smooth.
  • Step #11 Return to the heat, add the cream and adjust the Spice upings.
  • Step #12 serve this with the Shrimp Salsa.
