Butterscotch Bagel Pudding Recipe

Ingredients
  • 7 7/8 oz Butter; creamed
  • 1 Lemon or; juice of
  • 2 lb Brown sugar
  • 1 Heaped tsp ground ginger

Directions
  • Step #1 Dissolve sugar in a saucepan.
  • Step #2 When liquid, add butter & flavouring.
  • Step #3 Bring to a boil.
  • Step #4 Stirring constantly, keep carefully boiling for 20 mins or until a little blob hardens when dropped in ice-cold water.
  • Step #5 Beat well for 5 mins, pour in a buttered tin.
  • Step #6 After cooling, score into squares with a knife.
  • Step #7 When set, tap the bottom with a rolling pin to break into pieces.
  • Step #8 Makes about 2 lbs.
