Cabbage With Caraway Seeds Recipe

Ingredients
  • 2 md Tomatoes; sliced.
  • 1 md Green cabbage about 7-8 c
  • 1 tb Honey
  • 2 Carrots; sliced
  • 5 c Boiling water
  • 1 tb Powdered broth
  • 3 tb Lemon juice
  • 1 md Red onion; sliced
  • 2 c Sliced leeks
  • 16 oz Tomato sauce
  • 1 ts Thyme;
  • 2 tb Olive oil
  • 1 tb Light miso;
  • A dash of pepper.

Directions
  • Step #1 Source: My vegetarian friend, Esther Heat oil/leeks & onion-saute untilsoft.
  • Step #2 (5 or 6 medium regular onions can be substituted for the leeks&onions-according to taste).
  • Step #3 Add carrots & cabbage-simmer until wilted.
  • Step #4 Add thyme.
  • Step #5 Add water & broth powder, stir well, cover boil-simmer at medium heat for 10 mins.
  • Step #6 Add miso, lemon juice, honey.
  • Step #7 Simmer 3-4 mins.
  • Step #8 Add tomato & pepper.
  • Step #9 Simmer to your heart's content.
  • Step #10 A couple of notes: my husband hates leeks so i substitute.
  • Step #11 This is the original recipe.
  • Step #12 I usually keep overripe tomatoes in the freezer specifically for this soup.
  • Step #13 First I cover the wilted cabbage and carrots with boiling water.
  • Step #14 Then I add a big can of tomato paste instead of tomato sauce.
  • Step #15 Then I throw in the frozen tomatoes & keep simmering.
  • Step #16 Of course, if you use it for pesach, the miso does not go in.
