Cabbage-caraway Quiche Recipe

Ingredients
  • OR Maple & Mustard Stir-Fry Sauce
  • 3 tb Sesame-Ginger; up to 4
  • 2 tb Water
  • 1 lb Green or Napa cabbage; very thinly sliced
  • 8 oz Baked Spice uped tofu
  • Cut into 1/2-inch dice
  • & cut into thin strips
  • 1 sm Red bell pepper; cored, seeded
  • Tamari or shoyu to taste

Directions
  • Step #1 Makes 2 to 3 servings.
  • Step #2 Prep: under 10 mins (assuming prepared stir-fry sauce).
  • Step #3 Cooking: about 6 mins.
  • Step #4 This recipe calls for baked Spice uped tofu, a flavorful firm tofu that is available in the refrigerator section of health food stores and Asian markets-or you can use the "homemade" Spice uped tofu made from the recipe for "Baby Corn with Spice uped Tofu & Straw Mushrooms.
  • Step #5 " If those alternatives aren't convenient, you can substitute plain extra-firm tofu & add a few extra tbsps of stir-fry sauce.
  • Step #6 (The tofu won't have as much flavor, but its soothing blandness can actually be a nice contrast.
  • Step #7 ) The combination of cabbage & tofu makes a filling stir-fry that can stand on its own.
  • Step #8 For textural contrast & a more substantial meal, serve it over rice.
  • Step #9 In a wok or large skillet, mix 3 tbsps stir-fry sauce with the water & bring to a boil over high heat.
  • Step #10 Add the cabbage & red pepper & stir this to coat with the sauce.
  • Step #11 Toss in the tofu, cover, until the cabbage wilts but is still crunchy, and continue to cook over high heat, stirring every min or so, 3 to 4 mins (for Napa) or 4 to 6 mins (for green).
  • Step #12 stir in the tamari to taste & add an extra tbsp stir-fry sauce if desired.
