Cajun Boudin Recipe

Ingredients
  • 1/4 ts Sage white fish fillets vegetable oil
  • 1/2 ts Oregano
  • 1 tb Paprika
  • 3/4 ts Black pepper
  • 2 1/2 ts Salt
  • 1/2 ts Thyme
  • 3/4 ts White pepper
  • 1 ts Garlic powder
  • 1 ts Cayenne pepper
  • 1 ts Onion powder

Directions
  • Step #1 Mix all spices together & store this in a tight jar.
  • Step #2 Heat 1 tbsp vegetable oil in cast iron skillet on medium high heat until very hot, but not quite smoking.
  • Step #3 Rinse fish fillets & pat dry with paper towel.
  • Step #4 Rub a little oil on both sides of the fish & Sprinkle top spice mix on both sides (generously, if you like it hot).
  • Step #5 Sear the fish in the hot oil for about 1 min.
  • Step #6 Flip it & cook the other side.
  • Step #7 If the fillets are thick, you may need to lower the heat & cover to fully cook the fish.
  • Step #8 serve this with lemon wedges.
