Ingredients
8 oz Shrimp; peeled & deveined
1/4 c Butter or margarine
16 oz Fettuccine
1 c Half-and-half
1 lg Zucchini; short thin strips
1 1/2 c Sargento fancy supreme shredded parmesan; divided cheese
1 1/2 ts Cajun or creole Spice uping -plus extra for garnish
3 md Carrots; short thin strips
8 oz Smoked sausage; 1/4-inch slices
Directions
Step #1 Cook fettuccine according to package directions.
Step #2 Meanwhile, melt butter in 12-inch skillet over med-heat/flame.
Step #3 Add carrots; cook 3 mins, stirring every once in awhile.
Step #4 Add zucchini & shrimp; cook 5 mins or until shrimp are opaque & vegetables are crisp-tender, stirring every once in awhile.
Step #5 Add sausage; cook 2 mins, stirring every once in awhile.
Step #6 Add half-and-half, 3/4 c Parmesan cheese & Cajun Spice uping; heat through, stirring constantly.
Step #7 (Do not boil.
Step #8 ) Drain pasta; return to pot.
Step #9 Add shrimp mixture; toss well.
Step #10 Transfer to serving platter; Sprinkle top with remaining Parmesan cheese and extra Cajun Spice uping, if desired.
Step #11 8 servings.
Step #12 For a spicier dish, use andouille (Cajun-style) sausage.
