Cajun Fried Catfish Recipe

Ingredients
  • 8 oz Shrimp; peeled & deveined
  • 1/4 c Butter or margarine
  • 16 oz Fettuccine
  • 1 c Half-and-half
  • 1 lg Zucchini; short thin strips
  • 1 1/2 c Sargento fancy supreme shredded parmesan; divided cheese
  • 1 1/2 ts Cajun or creole Spice uping -plus extra for garnish
  • 3 md Carrots; short thin strips
  • 8 oz Smoked sausage; 1/4-inch slices

Directions
  • Step #1 Cook fettuccine according to package directions.
  • Step #2 Meanwhile, melt butter in 12-inch skillet over med-heat/flame.
  • Step #3 Add carrots; cook 3 mins, stirring every once in awhile.
  • Step #4 Add zucchini & shrimp; cook 5 mins or until shrimp are opaque & vegetables are crisp-tender, stirring every once in awhile.
  • Step #5 Add sausage; cook 2 mins, stirring every once in awhile.
  • Step #6 Add half-and-half, 3/4 c Parmesan cheese & Cajun Spice uping; heat through, stirring constantly.
  • Step #7 (Do not boil.
  • Step #8 ) Drain pasta; return to pot.
  • Step #9 Add shrimp mixture; toss well.
  • Step #10 Transfer to serving platter; Sprinkle top with remaining Parmesan cheese and extra Cajun Spice uping, if desired.
  • Step #11 8 servings.
  • Step #12 For a spicier dish, use andouille (Cajun-style) sausage.
