Cajun Pound Cake Recipe

Ingredients
  • Fresh mint; chiffonade
  • Fresh dill; chiffonade
  • 2 Salmon fillets;
  • 1 lg Carrot
  • Cajun spice mix;
  • Salt & pepper
  • 1 lg Idaho potato
  • 1 Roasted red pepper; or 1 jar
  • Olive oil
  • 1 tb Butter
  • 1 Ear fresh corn or canned
  • 4 oz Baby string beans

Directions
  • Step #1 Peel potato & carrot, cut into small dice.
  • Step #2 Toss with salt, pepper & 1 tbsp olive oil.
  • Step #3 Julienne red pepper.
  • Step #4 Drain canned corn, or clean corn-on-the-cob, blanch it in salted water & shock it in ice water.
  • Step #5 Blanch & shock string beans.
  • Step #6 Saute the potatoes and carrots in olive oil until they are cooked 90 percent of the way.
  • Step #7 remove this from heat, Spice up, & add the red peppers.
  • Step #8 Prepare fish: Heat a small saute pan & coat with 1 tbsp vegetable oil.
  • Step #9 Meanwhile, Spice up the salmon & dip the fillets in the cajun spice mix.
  • Step #10 Sear on both sides for 3 mins.
  • Step #11 Heat up the potato hash, corn, string beans, adding 1 tbsp butter, & the red peppers.
  • Step #12 Add the mint & dill.
  • Step #13 Transfer vegetables to a serving plate, top this with fish & spoon sauce around it.
  • Step #14 Yield: 1 serving.
