Deluxe Blackberry Pie Recipe

Ingredients
  • 1 tsp ground nutmeg
  • 2 tbsps blackberry brandy
  • 1 recipe pastry for a 9 inch double crust pie
  • 1 tbsp white sugar
  • 4 c fresh blackberries
  • 4 tbsps cornstarch
  • 1 1/4 c white sugar
  • 1 tbsp ground cinnamon

Directions
  • Step #1 Puree two c of the blackberries in a mixer until liquid.
  • Step #2 Strain out the seeds, & pour this into a saucepan.
  • Step #3 Whisk in 1 1/4 c sugar.
  • Step #4 Cook over a medium heat until boiling, stirring constantly & scraping bottom.
  • Step #5 Keep at a boil for 5 mins, & then remove this from heat.
  • Step #6 Mix cornstarch & brandy in a c.
  • Step #7 When well mixed, whisk into pan; stir until mixture returns to a boil.
  • Step #8 Remove from heat.
  • Step #9 Stir in the nutmeg & cinnamon.
  • Step #10 Check the consistency of the mixture; it should be like a thin pudding.
  • Step #11 If necessary, add cornstarch & water mixed at a 2:1 ratio to thicken.
  • Step #12 Fill the pie shell with the remaining two c of blackberries.
  • Step #13 Pour the blackberry puree over the fresh berries, covering evenly.
  • Step #14 Use either strips of dough criss crossed to cover, or cover with a solid sheet of dough with slits cut in it.
  • Step #15 Dust with sugar on top.
  • Step #16 Bake in a preheated 400F degrees F (205 degrees C) oven for 35 mins, or until crust is browned.
