Calico Burgers Recipe

Ingredients
  • 1/4 c Port wine
  • 1 ts Salt
  • 1/3 c All purpose flour
  • 1/4 c Canned beef broth
  • 1 sm Onion; sliced
  • 1/8 ts Ground dried thyme
  • 2 tb Red wine vinegar
  • 1/4 ts Ground pepper
  • 12 oz Sliced calf's liver
  • 4 Bacon slices

Directions
  • Step #1 Cook bacon in heavy large skillet over medium-high heat until crisp.
  • Step #2 Transfer bacon to paper towel to drain.
  • Step #3 Discard all but 2 tbsps fat from pan.
  • Step #4 Crumble bacon.
  • Step #5 mix flour, salt, pepper & thyme in shallow dish.
  • Step #6 Add liver and turn to coat; shake off excess.
  • Step #7 Heat fat in skillet over medium-high heat.
  • Step #8 Add liver & cook this until tender & brown on both sides, about 5 mins.
  • Step #9 Transfer liver to plate; cover with foil & keep warm.
  • Step #10 Add onion to skillet & saute until golden, about 5 mins.
  • Step #11 Mix in broth, Port & vinegar.
  • Step #12 Boil mixture until reduced to sauce, about 2 mins.
  • Step #13 Spice up to taste with salt & pepper.
  • Step #14 pour the sauce over liver.
  • Step #15 Sprinkle top with bacon & serve.
