Calypso Steaks Recipe

Ingredients
  • 1/2 ts Allspice; paprika & thyme
  • 1 ts Whole brown mustard seeds; optional
  • 1 1/2 lb Beef top round or top sirloin steak; cut 1-inch thick
  • 3 Cloves garlic; peeled
  • 10 Thin slices peeled fresh ginger; up to 20
  • 1/2 md Onion; cut in chunks
  • 1/4 c Soy sauce; honey & lime juice
  • 1 Jalapeno peppers; stems and seeds removed, cut in half, up to 2

Directions
  • Step #1 1.
  • Step #2 mix onion, jalapeno, garlic, mustard, ginger, spices & liquids in a mixer or food processor/blender fitted with a steel blade until mixed.
  • Step #3 2.
  • Step #4 Place steak in a sealable plastic bag & pour marinade over steak.
  • Step #5 Seal well & put in the fridge 20 min to 6 hrs, turning bag every once in awhile.
  • Step #6 Remove meat from bag, reserving marinade.

  • Step #8 Grill steak 4 to 6 inches from medium coals for 16 to 20 min.
  • Step #9 , turning once.
  • Step #10 Remove steak to carving board; let this stand 10 min.

  • Step #12 Meanwhile, bring reserved marinade to a rolling boil in a small saucepan over medium-high heat.
  • Step #13 Reduce heat & let simmer 2 to 3 min.
  • Step #14 5.
  • Step #15 Carve steak diagonally into thin slices.
  • Step #16 Arrange on a platter & serve this with heated sauce.
  • Step #17 Garnish with lime wedges, cilantro sprigs & jalapenos if desired.
  • Step #18 Serving Suggestion: Island Black Beans, Caribbean Rice, strawberries, Red Hot Onion, Fruit Kabobs of pineapple, kiwi & mango, Jamaican Peppered Corn Bread & Key Lime Pie.
  • Step #19 Note: This marinade is excellent for basting grilled beef back ribs, marinating beef briskets or for braising beef short ribs.
