Camembert Christmas Lunch Recipe

Ingredients
  • 4 Rounds mountain bread
  • 1/2 ts Grated peeled fresh ginger
  • 1 tb Raisins
  • 2 tb Minced shallots
  • 5 oz Camembert at room temperature; cut or torn into 12 pieces or so
  • 2 ts Cider vinegar
  • 1/2 ts Packed brown sugar
  • 1 lg Golden Delicious apple; cored & cut into 1/2-inch dice with the skin on
  • 1 pn Red hot pepper flakes

Directions
  • Step #1 Preheat the oven to 425F degrees.
  • Step #2 In a medium bowl, brown sugar, raisins, mix the apple, ginger, shallots, vinegar, & red pepper flakes.
  • Step #3 Let sit for 10 mins.
  • Step #4 To assemble: Heat the mountain bread, directly over a gas flame or grill, one at a time, or in a hot skillet, just until pliable, turning frequently, about 5 to 15 seconds each.
  • Step #5 Scatter 3 pieces of cheese in the center of a round of mountain bread.
  • Step #6 top this with a quarter of the apple chutney.
  • Step #7 Fold in the two sides & roll.
  • Step #8 Complete the wraps with the remaining ingredients.
  • Step #9 Or, prepare them all at once, if you prefer, assembly-line style.
  • Step #10 To cook: Lightly oil a baking sheet & heat in the oven for 5 mins.
  • Step #11 Carefully add the wraps, then turn & bake this until the second side is crisp, seam side down, & bake this until crisp on one side, about 10 mins total.
  • Step #12 remove this from the oven & allow to sit for 5 mins.
  • Step #13 Serve hot or warm, cut in half on the bias with a serrated knife.
  • Step #14 Yield: 4 servings.
