3 lb Sweet potatoes; peeled and cut crosswise into 1/2-inch-thick slices
Directions
Step #1 In a steamer set over boiling water steam the potatoes, or until they are just tender, covered, for 10 to 15 mins, & let them cool, uncovered.
Step #2 Arrange the potato slices in one layer, overlapping them slightly, in a buttered 2-quart shallow baking dish.
Step #3 In a small saucepan mix the brown sugar, & the salt, bring the mixture to a boil, the butter, stirring, the water, & cook it over moderate heat for 5 mins.
Step #4 Drizzle the syrup evenly over the potatoes, & bake the potatoes in the middle of a preheated 350F.
Step #5 oven, basting them with the syrup mixture every 15 mins, for 1 1/2 hrs, or until the syrup is thickened & the sweet potatoes have deepened in color.
Step #6 The candied sweet potatoes may be made 1 day in advance, kept covered & chilled, & reheated.
