Candied Sweet Potatoes With Lamb And Mint Recipe

Ingredients
  • 1 c Packed light brown sugar
  • 3 lb Large sweet potatoes; peeled and halved crosswise
  • 1/4 c Bourbon; up to 1/3
  • 1/4 ts Salt
  • 2 Sticks unsalted butter
  • 1/4 c Water

Directions
  • Step #1 preheat your trusty oven to 375F.
  • Step #2 Cut each potato half lengthwise into fourths.
  • Step #3 Steam potatoes on a steamer rack set over boiling water, until just tender, covered, then cool, 10 to 15 mins, uncovered.
  • Step #4 Transfer to a buttered 3-quart shallow baking dish.
  • Step #5 Simmer brown sugar, until sugar is dissolved & syrup is thickened, & salt, water, stirring every once in awhile, butter, about 5 mins.
  • Step #6 stir in the bourbon to taste.
  • Step #7 Drizzle syrup over potatoes & bake in middle of oven, until syrup is thickened, basting every once in awhile, about 1 1/4 hrs.
  • Step #8 Cooks' note: ? Sweet potatoes may be made 1 day ahead & chilled, covered.
  • Step #9 Reheat before serving.
