Candied Yams Recipe

Ingredients
  • 225 g Sweet potato; sliced
  • 1/2 Lime; juice of
  • Salt & pepper
  • 50 g Soft brown sugar
  • 450 g Sweet potatoes;
  • 50 g Butter
  • 4 tb Olive oil
  • 55 ml Water
  • 1 Red chilli; sliced in rings
  • 100 g Red onion; sliced

Directions
  • Step #1 --GARNISH----- 2 oz Fresh coriander leaves 1 Lime; cut in to wedges-MEATBALLS---- 450 g Minced lamb 100 g Onion; finely sliced 2 Cloves garlic; crushed 1 Lime finely grated; zest of 50 g Mint; sliced 1 ts Coriander seeds 1/2 Lime; juice of Salt & pepper Mix all ingredients to form meatballs & shape in to rounds the size of a walnut.
  • Step #2 Parboil the sweet potatoes without peeling in salted water, cool a little & peel skin off, cut in to even quarters or wedges and Sprinkle top with a little salt & pepper.
  • Step #3 Heat 2 tbsps of olive oil in a pan & brown the meatballs all over, remove & drain on absorbent paper.
  • Step #4 Remove nearly all fat from the pan, get pan hot & add sliced onion, turn continually until nicely browned, remove & add to meatballs.
  • Step #5 Add 2 tbsps of oil to the pan & heat, return meatballs & onion to the pan, add the sliced sweet potato & fry to brown on all sides, add the lime juice, chilli & 300ml water & Spice up this with salt & pepper.
  • Step #6 Stir carefully & bring to the boil, simmer half covered for approximately 10-15 mins.
  • Step #7 Heat the butter, soft sugar & 55ml water in a separate pan, add the sweet potato wedges & cook turning frequently for approximately 15 mins until they are coated in a sticky glaze.
  • Step #8 Check they are cooked through.
  • Step #9 Arrange the meatball mixture in to 4 bowls, after checking the Spice uping, place 3-4 wedges of sweet potato round the bowl, and garnish with sliced coriander leaves & lime wedges.
