Canning Tomato Juice Recipe

Ingredients
  • 1/2 c Vinegar
  • 1 ts Ground nutmeg
  • 1 tb Salt
  • 1 ts Ground cloves
  • 1/2 ts Ground ginger
  • 2 ts Ground cinnamon
  • 1 lb Seedless raisins
  • 1 1/2 c sliced suet
  • 3 1/2 c Firmly packed brown sugar
  • 1 ea Orange
  • 2 qt Cored & sliced green tomatoes
  • 2 1/2 qt sliced peeled apples

Directions
  • Step #1 When the frost beats the ripening of some of your tomatoes, turn them into this terrific mincemeat.
  • Step #2 A jar or 2 makes a fine gift.
  • Step #3 Because of low acid ingredients, this recipe must be processed in a pressure canner.
  • Step #4 The yield is about 10 pints.
  • Step #5 You'll need all the basic equipment for steam pressure canning, plus a grater & a large bowl.

  • Step #7 Organize & prepare ingredients, equipment, & work area.

  • Step #9 Sprinkle top salt over tomatoes in a large bowl or container, & then let this stand 1 hr.

  • Step #12 Meanwhile heat water in large kettle to boiling.
  • Step #13 Add tomatoes and let this stand 5 mins.
  • Step #14 Drain well.

  • Step #16 mix all ingredients in large kettle & heat to boiling.

  • Step #18 Pour or ladle hot mincemeat into hot jars to within 1 inch of tops of jars.
  • Step #19 Run a slim, non metal tool down along the inside of each jar to release air bubbles.
  • Step #20 Add more hot liquid to within 1 inch of tops, in necessary.

  • Step #22 Wipe tops & threads of jars with a clean damp cloth.
  • Step #23 7.
  • Step #24 Put on lids & screw bands as manufacturer directs.
  • Step #25 8.
  • Step #26 Process at 10 lb pressure for 25 mins.
  • Step #27 Follow manufacturer's directions for your canner.

  • Step #29 Follow basic steps for steam pressure canning, 10 through 24.
