  • Step #3 Choose perfect, firm, red ripe tomatoes.
  • Step #4 Wash, drain, & remove core & blossom ends.

  • Step #6 Organize & prepare equipment & work area.

  • Step #8 Cut tomatoes into quarters or leave whole.

  • Step #10 Put tomatoes into a large saucepan or kettle & let simmer until soft, stirring often.

  • Step #12 Press through a sieve, strainer, or food mill & return juice to the pan or kettle.

  • Step #14 Heat juice just to boiling.

  • Step #16 Pour or ladle juice into hot pint or quart jars to within 1/4 inch of the tops.

  • Step #18 Add 1 tsp salt or 2 tsps salt sugar mixture (1 part salt to 2 parts sugar) to each quart, if desired.

  • Step #20 Wipe tops & threads of jars with a damp clean cloth.
