Step #1 This recipe makes about nine 1/2 pint jars.
Step #2 You will need all the basic equipment, in addition to a fine sieve.

Step #4 Organize & prepare ingredients, equipment, & work area.

Step #6 In a large preserving kettle, cook tomatoes, peppers, bay leaves, & salt for 1 hr over med-heat/flame, stirring every once in awhile.

Step #8 Press through a fine sieve & return to kettle.
Step #9 Discard seeds and bay leaves.

Step #11 Add garlic, until tomato mixture is thick enough to mound on a spoon, stirring frequently, & continue to cook over medium to medium low heat, if used, about 2-1/2 hrs.
Step #12 Remove garlic.

Step #14 Pour hot paste into hot 1/2 pint jars to within 1/4 inch of tops.
Step #15 Run a slim, non metal tool down along the insides of jars to release any air bubbles.
Step #16 Add extra paste, if necessary, to within 1/4 inch of tops.
Step #17 6.
Step #18 Wipe tops & threads of jars with damp clean cloth.
Step #19 7.
Step #20 Put on lids & screw bands as manufacturer directs.
Step #21 8.
Step #22 Process in a boiling water bath 45 mins.
