Cantaloupe Salad Recipe

Ingredients
  • 1 sm Cantaloupe
  • 1 tb Fresh mint leaves; cut into very thin slivers
  • 1/4 c Sugar
  • 1/2 c Water
  • 1/4 c Lemon juice; depending on the sweetness of the melon, up to 1/3

Directions
  • Step #1 Cut the cantaloupe in half; remove & discard the seeds.
  • Step #2 Scoop out the flesh & place it in a food processor/blender.
  • Step #3 Puree until smooth.
  • Step #4 Measure 1 1/3 c of puree & transfer it to a mixing bowl.
  • Step #5 Next, place the water & sugar in a small saucepot.
  • Step #6 Bring to a full boil over high heat.
  • Step #7 stir in the the mint & as soon as possible remove this from the heat.
  • Step #8 let this stand for 1 min.
  • Step #9 Stir the mint syrup & lemon juice into the measured cantaloupe puree.
  • Step #10 Mix well.
  • Step #11 Pour the mixture into 8 popsicle molds or small paper c.
  • Step #12 Freeze until just set, about 1 hr, then insert popsicle sticks in the center of each pop.
  • Step #13 Freeze until completely firm.
  • Step #14 Makes 8 pops.
