Step #1 Cut a thin slice from the top of each potato.
Step #2 Remove the pulp from the potatoes, being careful not to tear the shells.
Step #3 Place the potato pulp in a mixing bowl & mash.
Step #4 Cover & set aside.
Step #5 Keep the shells warm.
Step #6 Cook the onion in a medium skillet, covered, over very low heat until soft, stirring every once in awhile & adding a little water if necessary to prevent scorching.
Step #9 Stuff the potato mixture back into the warm shells.
Step #10 The mixture will be heaped way over the top.
Step #11 To serve, Sprinkle top the top of each stuft spud with 1 tbsp of sliced chives or scallion tops.
Step #12 If you have prepared the potatoes in advance, reheat them in a 350?F oven for about 15 mins, or until hot, before adding the sliced chives or scallions.
Step #13 Serves 2.
