Caparones With Chorizo And Vinegar Peppers Recipe

Ingredients
  • 1/4 c Buttermilk
  • 3 tb Freshly grated Parmesan cheese
  • 1 md Onion, finely sliced
  • 2 tb sliced chives or scallion tops
  • 1/2 c Lowfat cottage cheese
  • 2 sm Baking potatoes , baked for 50 mins @400?F

Directions
  • Step #1 Cut a thin slice from the top of each potato.
  • Step #2 Remove the pulp from the potatoes, being careful not to tear the shells.
  • Step #3 Place the potato pulp in a mixing bowl & mash.
  • Step #4 Cover & set aside.
  • Step #5 Keep the shells warm.
  • Step #6 Cook the onion in a medium skillet, covered, over very low heat until soft, stirring every once in awhile & adding a little water if necessary to prevent scorching.
  • Step #7 Add the mashed potatoes, cottage cheese, buttermilk, & Parmesan & mix well.
  • Step #8 Heat through.
  • Step #9 Stuff the potato mixture back into the warm shells.
  • Step #10 The mixture will be heaped way over the top.
  • Step #11 To serve, Sprinkle top the top of each stuft spud with 1 tbsp of sliced chives or scallion tops.
  • Step #12 If you have prepared the potatoes in advance, reheat them in a 350?F oven for about 15 mins, or until hot, before adding the sliced chives or scallions.
  • Step #13 Serves 2.
