Caper Sauce Recipe

Ingredients
  • 1/4 ts Hot sauce
  • Salt
  • 1/4 c Capers
  • Cayenne pepper
  • 1/4 c Heavy cream
  • 1/2 c Small sliced tomatoes
  • 1/2 ts Worcestershire sauce
  • 1 c White wine
  • 1/4 c Minced shallots
  • 2 tb sliced shallots
  • 1 1/2 Sticks cold butter; cut into pieces

Directions
  • Step #1 In a saucepan, over med-heat/flame, mix the shallots & wine.
  • Step #2 Spice up this with salt & cayenne.
  • Step #3 Bring the mixture to a boil.
  • Step #4 Reduce the heat to medium low & let simmer until the mixture reduces by half.
  • Step #5 Add the cream & continue to cook for 2 mins.
  • Step #6 remove this from the heat & whisk in the butter, a couple of pieces at a time.
  • Step #7 Spice up this with the salt, cayenne, hot sauce & Worcestershire.
  • Step #8 Strain through a fine-mesh sieve.
  • Step #9 Place back in the saucepan & add the shallots, capers & tomatoes.
  • Step #10 Stir well & keep warm.
  • Step #11 Yield: about 2 c.
