Step #1 Sweat off the white sliced onion, add the sliced garlic, followed by the tomatoes & tomato puree & half the red pepper.
Step #2 Add the basil leaves & vegetable stock & leave to simmer for 12 mins.
Step #3 Slice the other half of the red pepper in two diagonally, brush with olive oil & place on to a preheated griddle pan.
Step #4 Repeat the process with all the vegetables until cooked.
Step #5 Remove the sauce from the heat & add the remaining olive oil.
Step #6 Place the hand mixer in to pan & mix until well mixd.
Step #7 Adjust the Spice uping.
Step #8 Pour the minestrone into a bowl & stack the chargrilled vegetable selection in the middle of the soup.
