Cappuccino Sundaes Recipe

Ingredients
  • 1 Courgette
  • 1 l Vegetable stock
  • 1 Red onion
  • 2 Cloves garlic; crushed
  • 15 g Tomato puree
  • 125 g Onion; finely sliced
  • 1 Carrot; sliced
  • 100 ml Olive oil
  • 1 cn Tomatoes; sliced
  • 1 Green pepper
  • 1 Baby aubergine
  • 1 Red pepper
  • 1 ts Thyme

Directions
  • Step #1 Sweat off the white sliced onion, add the sliced garlic, followed by the tomatoes & tomato puree & half the red pepper.
  • Step #2 Add the basil leaves & vegetable stock & leave to simmer for 12 mins.
  • Step #3 Slice the other half of the red pepper in two diagonally, brush with olive oil & place on to a preheated griddle pan.
  • Step #4 Repeat the process with all the vegetables until cooked.
  • Step #5 Remove the sauce from the heat & add the remaining olive oil.
  • Step #6 Place the hand mixer in to pan & mix until well mixd.
  • Step #7 Adjust the Spice uping.
  • Step #8 Pour the minestrone into a bowl & stack the chargrilled vegetable selection in the middle of the soup.
