Capsicum Chicken Saute Recipe

Ingredients
  • 3 tb Crunchy peanut butter
  • 1 tb Lemon juice
  • 1 Clove garlic; crushed
  • 1/4 ts Chilli powder; or to taste
  • 2 Red peppers
  • 1/4 pt Water
  • 1 Red chilli; deseeded and finely sliced
  • 1 tb Olive oil
  • Salt & freshly ground black pepper

Directions
  • Step #1 1.
  • Step #2 Place peppers an a baking tray & bake in a preheated oven (400?F / 200?C / gas mark 6) for 20-25 mins, turning once.
  • Step #3 2.
  • Step #4 remove this from oven & when cool carefully remove the blistered skins, taking out the seeds at the same time.
  • Step #5 Retain the oil that exudes from the peppers, it's exquisite! 3.
  • Step #6 Meanwhile in a saucepan carefully fry the onion & garlic in the oil until soft.
  • Step #7 4.
  • Step #8 Add the chilli powder & cook for 30 seconds.
  • Step #9 5.
  • Step #10 Add the water & peanut butter, bringing to the boil & then simmering for 8 mins, stirring every once in awhile.
  • Step #11 You may need to add a little water if the mixture thickens too much.
  • Step #12 6.
  • Step #13 Pour the contents of the pan into a mixer, add the peppers with their oil, the lemon juice & Spice up well.
  • Step #14 7.
  • Step #15 mix until smooth & turn out into a serving dish.
