Step #1 Whisk the egg yolks in a bowl until frothy.
Step #2 Mix the sugar & water in a saucepan & stir over a high heat until the sugar has dissolved & the water is boiling.
Step #3 Brush the sides of the pan down with cold water, then allow the mixture to boil without stirring until a deep golden colour.
Step #4 While the sugar is caramelising, bring the milk & cream just to the boil & remove this from the heat.
Step #5 Once the sugar has caramelised, stirring all the time with a wooden spoon, slowly pour the milk/cream mixture into the caramel, adding a little at a time.
Step #6 Whisk in the egg yolks carefully then divide this mixture into 6 or 8 souffl? dishes or oven-proof ramekins.
Step #7 Place the ramekins in a baking dish & half fill with hot water.
Step #8 bake this at 150c.
Step #9 for 45 mins, then remove the ramekins from the water & chill.
Step #10 Just before serving, dredge the tops with icing sugar and caramelise with a blowtorch or under a grill.
Step #11 Watch carefully to ensure that it doesnt burn.
