Caramelised Tartlet Of Pear And Leek Recipe

Ingredients
  • 2 tb Kirsch
  • 6 Tangerines
  • 300F g Castor sugar
  • 350 ml Water

Directions
  • Step #1 Remove all the peel from the tangerines, ensuring that all pith is removed.
  • Step #2 With a very sharp knife cut the peel into very thin strips.
  • Step #3 Place the peel in a sauce-pan with 50ml/2floz of the water & cook for about 5-6 mins until softened.
  • Step #4 Place the remaining water and the sugar into a heavy based sauce-pan.
  • Step #5 Boil until the mixture starts to thicken then dip the tangerines in the syrup.
  • Step #6 The syrup should be thick enough to coat the tangerines.
  • Step #7 Allow them to cook for 2-3 mins until warmed through.
  • Step #8 Remove the tangerines from the syrup & place them on a serving plate.
  • Step #9 Place the blanched peel into the remaining syrup & cook this until the syrup is reduced & thickened.
  • Step #10 Pour the peel over the oranges & allow this to cool before serving.
