Step #1 oil.
Step #2 SALMON WITH ONION CONFIT & RED WINE SALMON SAUCE SALMON 2.

Step #4 mix the minced herbs in a shallow dish or on a piece of waxed paper & coat the flesh side of each fillet with them.

Step #11 In a large saucepan or high-sided pan, melt the butter over medium heat.
Step #12 Add the shallots, garlic, leeks, celery, & thyme & saute for 2 min.
Step #13 Arrange the fish bones on top of the vegetables in an even layer, cover, & reduce the heat to medium.
Step #14 cook this until the bones become opaque, 5 to 6 min.

Step #16 Raise the heat to high, add the stock & wine, & bring to a boil.
Step #17 Reduce the heat slightly & let simmer until 1-1/2 c of liquid remain, about 30 min.
Step #18 Strain through a fine strainer, pushing down on the solids.

Step #20 Pour the strained liquid into a clean saucepan & reduce over medium-high heat until slightly syrupy, 10 to 12 min.
Step #21 Strain through a chinois or fine strainer.
Step #22 Taste & Spice up.
Step #23 It will taste strong and salty & probably will need pepper only.
Step #24 TO SERVE 3 c onion confit 1/2 c Red Wine Salmon Sauce 1.
Step #25 Divide the confit among 6 warm plates & place a salmon fillet on top of each portion.
Step #26 2.
Step #27 Spoon the sauteed vegetables around the confit & ladle the red wine sauce around the vegetables.
Step #28 Caramelized Onion Tart, Salmon with Onion Confit & Red Wine Salmon Sauce.
