Cardamom And Coriander Rice Recipe

Ingredients
  • 20 Baby artichokes
  • Salt; to taste
  • 1/4 c Extra-virgin olive oil
  • 1 tb Crushed red pepper flakes
  • 6 oz Dry white wine;
  • Freshly-ground black pepper; to taste
  • 12 Garlic cloves; peeled
  • 1/2 c Fresh mint leaves; stems removed

Directions
  • Step #1 Peel & trim artichokes, leaving stem intact & place this in acidulated water.
  • Step #2 Place olive oil & garlic cloves in pan & place over medium-high heat.
  • Step #3 cook this until garlic is light golden-brown.
  • Step #4 Drain artichokes and place this in pan with garlic & cook this until tender (every once in awhile spritzing with wine, when necessary, to slow the cooking), about 10 mins.
  • Step #5 Add chilies & mint, stir through, Spice up this with salt and pepper & serve.
