Step #1 Peel & trim artichokes, leaving stem intact & place this in acidulated water.
Step #2 Place olive oil & garlic cloves in pan & place over medium-high heat.
Step #3 cook this until garlic is light golden-brown.
Step #4 Drain artichokes and place this in pan with garlic & cook this until tender (every once in awhile spritzing with wine, when necessary, to slow the cooking), about 10 mins.
Step #5 Add chilies & mint, stir through, Spice up this with salt and pepper & serve.
