Cardamom Scented Oatmeal Pear Crisp Recipe

Ingredients
  • 3 Cardamom pods
  • 1/2 ts Cumin
  • 8 oz Basmati rice
  • Salt & freshly ground black pepper
  • 1 Clove garlic; crushed
  • 1 oz Peanuts
  • 1 oz Cashew nuts
  • 1 Onion; sliced
  • 1 ts Curry powder
  • 1 1/2 oz Flaked almonds
  • 2 oz Raisins
  • 1 Bay leaf
  • 1/2 ts Cinnamon
  • To garnish: lemon slices and sprigs of parsley
  • 1 pt Vegetable stock
  • 1 oz Butter

Directions
  • Step #1 1.
  • Step #2 Melt the butter in a large saucepan & cook the onion & garlic for 2-3 mins.
  • Step #3 2.
  • Step #4 Add the rice & spices & cook for a further 2 mins.
  • Step #5 3.
  • Step #6 Pour over the stock, add the bay leaf & cardamom pods, Spice up to taste & bring to the boil.
  • Step #7 4.
  • Step #8 Cover & let simmer for 15 mins, until the rice is tender & the water is absorbed.
  • Step #9 5.
  • Step #10 Remove the bay leaf & stir in the the raisins, & nuts.
  • Step #11 6.
  • Step #12 Transfer to a serving dish, garnish with the lemon & parsley and serve as soon as possible.
