Cardamom-almond Muffins Recipe

Ingredients
  • 4 lb Sweet Potatoes;
  • 3/4 c Whipping Cream; warmed
  • 1/4 ts Ground Nutmeg
  • 1 c Butter; softened,
  • 1 ts Ground Cardamom

Directions
  • Step #1 preheat your trusty oven to 325-F degrees & line two large baking sheets with aluminum foil.
  • Step #2 Pierce the sweet potatoes with a fork & place unpeeled potatoes on the baking sheets.
  • Step #3 bake this until very tender, usually about 1 1/2 hrs.
  • Step #4 Let cool slightly.
  • Step #5 Peel warm potatoes & place this in a large mixing bowl.
  • Step #6 Beat or mash the cooked sweet potatoes until soft.
  • Step #7 Add the room-temperature butter, whipping cream, cardamom, & nutmeg.
  • Step #8 Whip until smooth & creamy.
  • Step #9 Spice up lightly with salt.
  • Step #10 Transfer potatoes to a 9-inch by 13-inch baking dish.
  • Step #11 You may prepare the dish 1 day ahead of your meal.
  • Step #12 Cover & put in the fridge.
  • Step #13 Bring the dish to about room temp before warming for the meal.
  • Step #14 bake this until the potatoes are heated through & beginning to brown on top, usually about 45 mins in a 325-F degree oven.
  • Step #15 Serve warm.
