Caribbean Chicken Shish Kebabs Recipe

Ingredients
  • 8 lg Garlic cloves; minced
  • 1 1/3 lb Boneless skinless chicken thighs; cut into 1-inch pieces
  • 2 ts Ground coriander
  • 4 Chayote squash; halved lengthwise, cut into 1/4-inch-thick slices or 4 zucchini, cut into 1/2-inch-thick rounds
  • 2 ts Dried mustard
  • 2 ts Ground cloves
  • 2 ts Chili powder
  • 1/3 c Fresh lime juice
  • 6 Yellow summer squash; cut into 1/2-inch-thick rounds
  • 2 lb Boneless skinless chicken breasts; cut into 1-inch pieces
  • 1 ts Aniseed
  • 4 Red onions; cut into 1-inch pieces
  • 1 1/2 c Olive oil
  • 2 ts Ground turmeric
  • 12 Bamboo skewers;

Directions
  • Step #1 mix garlic, turmeric, coriander, dried mustard, ground cloves, chili powder & aniseed in small bowl.
  • Step #2 Place chicken in 1 glass baking dish & vegetables in another.
  • Step #3 Sprinkle top each with half of spice mixture.
  • Step #4 Add half of olive oil & half of fresh lime juice to each & mix to coat well.
  • Step #5 Cover & put in the fridge 6 to 8 hrs.
  • Step #6 Soak skewers in water 30 mins.
  • Step #7 Drain.
  • Step #8 Alternate chicken and vegetables on skewers.
  • Step #9 (Can be prepared 2 hrs ahead.
  • Step #10 Cover and put in the fridge.
  • Step #11 ) Prepare barbecue (medium heat) or preheat broiler.
  • Step #12 Spice up kebabs with salt & pepper.
  • Step #13 Grill until chicken is cooked through, about 5 mins per side.
  • Step #14 Transfer to platter.
  • Step #15 Serves 12.
