Caribbean Jerk Seasoning Recipe

Ingredients
  • 1 Fresh pineapple
  • 2 Vanilla pods
  • 1 Fresh mango
  • 4 oz Raw cane caster sugar
  • 6 Eggs
  • 2 tb Rum
  • 1 1 pint full cream milk
  • 4 oz Crystallised papaya chunks
  • 1 pt Whipping cream

Directions
  • Step #1 Boil the milk with the vanilla pods for 15 mins.
  • Step #2 Separate the eggs, mix the sugar in with the egg yolks.
  • Step #3 Remove the vanilla pods from the milk & add the milk to the egg mixture to make an egg custard.
  • Step #4 Put the custard in a boil over a pan of boiling water & leave to thicken, making sure that it is not allowed to boil.
  • Step #5 Strain the custard to remove any lumps.
  • Step #6 Leave to cool then freeze for two hrs in a freezer box.
  • Step #7 Meanwhile, soak the pineapple, the mango & the papaya in the rum.
  • Step #8 Whip the cream until it starts to thicken.
  • Step #9 Mash up the frozen custard, add the whipped cream & the fruit mixture & fold in carefully so as to keep all the air in.
  • Step #10 Put the ice cream mixture back into the freezer & leave for a further two hrs.
  • Step #11 It will then be ready to serve.
