50 g Okra; washed, topped, tailed & cut in small pieces
2 400F g; can sliced tomatoes
50 g Creamed coconut;
2 tb sliced spring onion
1 tb Haldi
1 tb Paprika
1 200 g; can kidney beans
50 g Spinach; washed & sliced
1 1/2 kg Assorted root vegetables; cho-cho, yam, green banana, sweet potato, carrot, pumpkin, potato peeled & sliced
1 Onion; finely sliced
Directions
Step #1 Heat the oil in a large saucepan with a well fitting lid.
Step #2 Add the onions, spring onion, garlic, thyme & saut? for a couple of mins.
Step #3 Add the haldi & paprika, stir in the well & cook for another min.
Step #4 Add canned tomatoes, coconut cream & mix in.
Step #5 Add all the root vegetables, stir in the well, salt & pepper, sugar, kidney beans, cover with a lid & let simmer for 20 mins or until the vegetables are cooked.
Step #6 Add the okra & spinach & cook for a further 2 mins.
